Easy and Tasty Chicken and Vegetable Oven Meal

Today I made one of the easiest and most delicious recipes I've ever made. What I like about it, is if you are one that would prefer not to use potatoes for carb reasons, a substitute could be made using another vegetable such as squash or carrots. I may try with another vegetable another time.  I made enough for three portions.

Can we say yum?! Next I took what was left over and put into freezer and microwave safe containers to put inside my fridge. Since I only made three portions that gave me enough for today and the next couple days if I want to eat it. Or I can place in the freezer and save for another night.

This oven chicken and vegetables was not only a delicious recipe but it was simple to make and really easy to put away for another time. I may need to make sure more. If you decide to try it, let me know!

  19. Oh I love finding quick and easy meals for my family. We have so many nights each eek that we are running around until nearly dinner time. Great way to make these meals and then just pop it in the oven!

We do a lot of chicken recipes and although sometimes we have time to really cook something time consuming, as the kids get older, more and more it's do something quickish and plan for leftovers. Another great substitution is using cauliflower for potatoes, we've used that in soup and a few other dishes and snuck them by our picky eater no problem.

  21. Sounds yummy! I have substituted cauliflower or radish for potatoes. The radish tend to take on the flavor of the dish. I thought this was weird at first, given their flavor but I use them a lot in stews and they take on a nice beefy flavor.
